  • 1 kg carrots
  • 1 onion, 2 cloves of garlic;
  • 2 bulbs of fennel
  • 2 sachets of Broth by Design

  • 100 ml single cream [for non-vegan, option]
  • A slice of bread [optional]

This is an excellent choice for the autumn months, since the soup is made to be a delicious meal, and yet keep you warm, hydrated, and full. And what’s more important – it’s one of the easiest options to prepare. 

To begin with, you should preheat the oven to 375ºF or 190ºC. Make sure that the carrots and the onions are piled, and once you are done, trim and slice them all together with the fennel bulbs. Put the vegetables inside a roasting dish and cover them with 2 tablespoons of olive oil.

Keep them in the roasting dish for around 20 minutes, and mix them with the unpeeled garlic cloves. Once everything is stirred and you’ve been roasting them for 20 minutes, you can move them in the preheated oven and wait for another round of 20 minutes, or wait until they become soft and brown.

Peel the papery skin from the cloves and put the vegetables inside a large pan with the pre-made broth and bring everything to the boil. Shimmer everything gently for 5-10 minutes and use a stick blender to liquidize the soup and make it smooth. Add pepper and salt by option or serve it with a swirl of cream.

Broccoli Chowder Hearty Soup


  • 3 cups fresh broccoli
  • 3 big peeled and diced potatoes
  • 2 cups of premade Broth by Design

  • 2-3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 ground nutmeg
  • 2 cups of milk

Take a large saucepan and mix broccoli, potatoes, green onion, the broth and salt, pepper upon flavor, if the spices inside the broth aren’t enough for your preferences. Once they are boiling you should reduce the heat and cover it to simmer for 15 minutes, until the vegetables inside are tender.

In the meantime, you can take a saucepan for the butter and use heat to melt it. Stir the flour and nutmeg until everything is smooth and then gradually add milk, just as when you are preparing bechamel sauce. Cook the ingredients for around 2 minutes and stir the vegetable mixture inside. Sprinkle the cream soup with cheese and enjoy a mouthful of delicious soup!

Beef Lentil Comforting Soup


  • 1 large, chopped onion
  • 2 pieces of celery, finely chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon finely grated fresh ginger
  • 300g beef mince
  • 1 tablespoon curry powder
  • 2 cups of premade Bone Broth by Design
  • 400g canned diced tomatoes
  • 1 cup of dry lentils, rinsed and drained
  • 500 g raw pumpkin, cut in 1cm pieces
  • 150g fresh coriander and baby spinach leaves 
  • Olive oil

But even though the list is bigger than the previous one, preparing this soup is simple, suitable for all the home cooking enthusiasts. What’s even better, you can use it as a chicken soup recipe, if you decide to replace the beef with another source of proteins.

Take a deep non-stick frying pan and add the olive oil. Use medium heat to cook onion, celery, ginger, and garlic, stirring it for 5 minutes, until the onion is softened and golden. Add the mince and cook it until the lumps are broken around 3 more minutes. Once they are browned, mix the curry powder for 1 more minute. 

Once fragrant, add the bone broth, tomatoes, and lentils. Bring everything to the boil and on reduced heat simmer the covered ingredients for 15 minutes. When it’s done, add the pumpkin and simmer them covered for another 10 minutes, or simply check whether the lentils and pumpkin are tender. For the final touch, add spinach and coriander for one minute, until the spinach has wilted.
