Ingredients
250 g string beans
1 cup of Green Broth by Design
1 onion, chopped
300 g tomatoes, diced
½ cup maple syrup and marinade
12 tbsp freshly squeezed lemon juice
1 bunch of arugula
Salt and freshly ground black pepper
Preparation
After washing the beans, cut them in half, then boil them for 15minutes in water. Drain the beans and let them cool.
Afterward, pour the Green Broth over the couscous and let it soak and cool.
Mix the onion and tomatoes with the couscous and the beans. Season them with some lemon juice and let it sit for 2-3hours with the previously prepared marinade.
Before serving, mix the arugula into the salad.
Vegetarian Hot Dog
Who said that hot dogs can’t be vegetarian?
There is a variety of tofu and seitan sausages available in grocery stores. For this recipe, we recommend the smoke-flavored kind.
Ingredients
2 onions
1 cucumber
lettuce leaves
4 hot dog buns
4 smoked tofu sausages
Aluminum grilling pan
Preparation
Cut the onions and cucumber into sections and let the lettuce leaves dry, after washing them.
Grill the sausages directly over the grill, then place the onions into a baking pan and grill for about 5-6 minutes, rotating and brushing with oil.
Grill the buns for about thirty seconds on each side. Don’t forget to brush the insides with some BBQ sauce.
Fill each with a salad leaf and cucumber slices, and then with sausage and onions on top. Close the buns and enjoy your vegetarian hot dog!
Noodle and Lentil Salad
Ingredients
1 onion, chopped
1 sachet of Green Broth by Design
100 g green lentils
200 g pasta
100 g mayonnaise
100 g sour cream
40 ml of apple juice
2 tbsp chutney
2 apples, sliced
100 g baby spinach
Salt and pepper
Put the onions and the Green Broth powder into water and boil the mixture. Add the lentils and cook for about 30minutes.
Separately, boil the noodles in salted water. Let both cool.
Mix mayonnaise, sour cream, chutney, and apple juice, add in some salt and pepper. Then, mix the lentils and the noodles with the salad sauce and let it sit for one to two hours.
Add the spinach and apples before serving and season again with salt and pepper, to taste.
Bonus Recipe: Grilled Asparagus with Goat Cheese
This simple recipe for preparing some delicious asparagus on the grill will make your summer cooking tastier than ever!
1 bunch green asparagus
50 g goat cheese
75 ml Tarragon Oil
Salt to taste
Aluminum baking pan
Wash the asparagus and cut it, removing the hard ends. Crumble the goat cheese.
Brush the asparagus with the tarragon oil and grill it in a baking pan for about 15 minutes, rotating and continually brushing with oil.
Place on a platter, drizzle with remaining oil, and salt lightly to taste. Add the crumbled cheese on top.
