Fresh Mozzarella, Tomato, and Basil Couscous Salad

Ingredients 

2 cups diced tomatoes 

3/4 cup diced fresh mozzarella cheese 

3 tablespoons minced shallots 

2 teaspoons extra virgin olive oil 

1/4 teaspoon lemon juice 

salt and fresh ground black pepper 

1 garlic clove, minced 

1 1/4 cups water

 1 cup uncooked couscous 

1/4 cup chopped fresh basil leaves

Directions

First, take a large bowl and combine salt, pepper, garlic, along with tomato, mozzarella, lemon juice, olive oil, and shallots. Then mix the ingredients properly and keep them in the refrigerator for thirty minutes, to marinate.

Take a saucepan, and heat water until boiling. Put the couscous and mix it. Then remove it from the stove and keep it aside for five minutes, allowing it to cool. After this, take the chopped basil along with the cooled couscous and add them to the first mixture in the bowl.

Spicy Egg And Avocado Wrap 

Nothing says fast and delicious like a recipe with eggs. Chunks of egg, creamy avocado, and fresh crisp veggies tucked neatly into a handheld wrap, sounds yummy!

Ingredients

8 large eggs

4 large red-leaf lettuce leaves 

4 whole-wheat wrap slices of bread 

1 avocado sliced 

1 medium tomato sliced 

1/8 English cucumber, thinly sliced 

1 tablespoon chili or hot sauce

Salt and freshly ground black pepper 

Directions

Place the eggs in a saucepan and cook them. When done, remove the yolks from 4 of the eggs. Slice the remaining egg whites and whole eggs into slices.

Place a lettuce leaf over the middle of each wrap bread. Cover each with the avocado, sliced eggs, tomato, and cucumber. Spice it up with the chili sauce and season it with salt and pepper, to taste. Wrap one side of the bread over the filling to form a pouch enjoy your spicy egg and avocado wrap.

Simply, Put the broth and saffron into a medium pot and bring it to a boil. Stir in the rice and salt, then cover and simmer over low heat until all the water is absorbed, for about 20 minutes.
