Paleo Recipes for the Whole Family
Lettuce Wrapped Pork Tacos
Serves 4
Ingredients:
- 4 teaspoons coconut oil
- 2 pounds pasture-raised pork tenderloin
- sea salt
- 2 onions, diced
- 2 jalapenos, minced
- 1 cup BONE BROTH Grandma’s Chicken Soup
- 4 medium-sized ripe tomatoes, diced
- 5 tablespoons fresh lime juice
- 5 tablespoons chopped cilantro
- 1 lettuce
- 3 avocados, sliced
Directions: Season the tenderloin with salt on both sides. In a large skillet, heat the coconut oil over medium heat. When the oil is hot, begin to sauté the tenderloin until it begins to change color, approximately 5 to 7 minutes. Place your browned pork in a bowl.
In the same skillet, sauté the onion and jalapeno until they are soft. Lower the heat and stir in the broth and tomatoes; bring to simmer. Simmer the mixture for 3 minutes while stirring regularly.
Add the pork back into the skillet with the onion and tomato mixture. Pour in the lime juice; stir and continue simmering until the pork is cooked through. Divide the seasoned pork mixture into large lettuce leaves and top with cilantro and avocado slices. Bon Apetit!
Caveman Shepherd Pie
Serves 8
Ingredients:
- 4 tablespoons olive oil
- 1 large onion diced
- 2 pounds organic grass-fed lean ground beef
- 2 cups diced carrots
- 2 cups diced celery
- sea salt
- fresh ground pepper
- teaspoon smoked paprika
- 1 cup BONE BROTH Vegetable Bouillon Flavor
- 2 large cauliflower heads, chopped and steamed
Directions:
Preheat the oven to 350°F. In a large frying pan, heat 2 tablespoons of olive oil. When hot, add the onion and sauté until tender. Stir in the carrots and celery, adding a bit more olive oil if necessary, and again sauté until tender.
Add the ground beef to the vegetables; sauté until brown. Season the meat with salt, pepper, and paprika. Pour in the broth and cook it together.
In a blender, put the steamed cauliflower with 2 tablespoons of olive oil. When finished, they should have a similar consistency to mashed potatoes.
Spoon the vegetable and beef mixture into a baking dish. Spread the cauliflower over the top of the meat and bake in the preheated oven for 30 minutes; serve warm.
